Beginning to prepare and eat real, healthier food was definitely a great change this year. Mashed potatoes are great on their own, but loaded with squash and veggies makes it even better!
Serves one. Double ingredients for two, or if you’re just really hungry.
- 1 mashed potato
- 1/2 cup spaghetti squash
- 1 chopped broccoli floret
- 2 chopped brussels sprouts
- 1 tbs coconut oil (refined)
- Salt, oregano, and basil to taste.
Eat as is, or stir up, and enjoy!
