Have some pumpkin you still haven’t eaten yet that’s taking up space in the freezer? Have a sweet tooth and a love for coconut?
These tasty squares are vegan, no-bake, and pretty quick to make!
Pumpkin, Oatmeal & Coconut Squares Recipe
- 1/2 cup cooked pumpkin
- 1/4 cup coconut oil
Warm both until coconut oil is liquified. Mix together with a fork.
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. vanilla extract
- 1/2 cup rolled oats
- 1/4 cup shredded coconut (sweetened)
Mix well with fork. If mixture is too dry, add more coconut oil; if it’s too moist, add more oats. Adjust ingredients and add sugar to taste.
Spoon half of the mixture into a tin, pan, or other container with a lid for storage. Pat even and score with a fork. Sprinkle shredded coconut on top and pat down with fork.
For the second layer, spoon on the rest of the mixture, pat even, and score with a fork. Top with more shredded coconut. As much as you like, no judgements here!
Secure the lid and pop in the fridge or freezer for a little to set. Cut into sections and store in the fridge.
